Varietal Composition 96.4% Cabernet Sauvignon, 3.4% Grenache, 0.2% Shiraz
Aroma This wine genuinely captures the classic varietal characters of Cabernet Sauvignon with leafy and capsicum aromas, highlighted with hints of cedar and spice.
Palate Rich flavours of blackberries, rhubarb and toasty oak open up to a soft, fleshy middle palate to create a balanced, savoury lingering finish. The 2012 vintage of Woodstock Cabernet Sauvignon has bright acid and firm yet elegant tannins wrapped in a smooth, warm richness.
Cellar This is a wine that will reward six to ten years of cool cellaring allowing the savoury fla-vours to add to its complexity and roundness.
Serving Suggestion: Italian pork sausage and brown mushroom pasta or Veal Scallopini wrapped in prosciutto and sage and served with roasted pumpkin and potato.

Winemaking:
There are three blocks of Cabernet on the Estate... each providing a unique character to the wine. Low yielding old vines from our Honey Hut block provide tannin, backbone and structure, Block 3 vines provide mid-palate fruit, our “Pineless” Block provides lifted, leafy characters. Yields range from 6 to 10 tonnes per hectare. Small berries with ample fermentation time on skins (at least 5 days) result in great colour and tannin structure. This wine was matured for just over 14 months in 13% new oak and the rest in 2 to 3 year old carefully selected American and French oak to provide softness and complexity.
