Colour: Pale straw with light green hues.
Aroma: Fresh, ripe pear, rockmelon and vanilla yogurt aromas are found, along with some subtle lemon and mandarin citrus notes with hints of green apple.
Palate: An intensely flavoured palate of pear and green apple, combined with peach and citrus notes. With excellent texture and acidity gives this wine a unique balanced structure, with the palate showing excellent fruit weight and extreme length.
Vinification and Maturation: Individual parcels of Pinot Gris were hand picked based on flavour ripeness and style direction in March, where they were promptly crushed and sent to press where the juice was taken off skins as soon as possible to ensure minimal colour and phenolic pickup. The ferments were kept at around 14 – 18 degrees to retain as much fruit character as possible. The wine was kept on lees with a small battonage program to help add extra richness to the palate. The wine was bottled under screwcap to retain freshness and minimize and potential cork taints.
