Sourced from Margaret River's Ellensbrook, the grapes for Paul Conti Chardonnay were whole-bunch pressed, partly fermented, and matured in new French oak for 4 months. The process resulted in an elegant pale straw coloured wine. This stylish Chardonnay exhibits stone fruit aromas and hints of oak on the bouquet. The medium-bodied palate is lifted with stone fruit and melon flavours, balanced by subtle lees and hints of smoky oak, and developing toasty characters over careful cellaring. The crisp and citrusy acidity offers a fresh and lengthy finish. The wine pairs extremely well with grilled seafood, fresh shellfish, or lightly sauced white meats.
