Colour Pale, lemon green in colour
Aroma lifted fruit aromas of nectarine, cinnamon spice and a hint of almond.
Palate The incredibly rich and creamy palate is indicative of the vintage all perfectly balance with crisp natural acidity. Soft poached pear, lychee and white peach fruits all dominate the beautifully textured palate. The extended lees contact this wine has received has added real complexity to the mid-palate and given the wine an extra dimension along with a long lingering finish.
Cellar A wine best enjoyed young
Food Match match with fresh seafood such as Thai fish cakes or crab and avocado salad
The Fruit The fruit was sourced from vineyards in the Adelaide Hills along with a small parcel from Eden Valley, providing a diverse spectrum of flavours and aromas to create a rich and complex wine.
Winemaking About half of the fruit was whole bunch pressed while the balance of fruit was de-stemmed and placed directly into the press to minimise skin contact. The juice had minimal handling and 65% was cool fermented whilst the remainder (25%) was fermented on solids (10% in 1, 2 and 3 year old French oak to increase complexity). After fermentation the wines remained on yeast lees for several months to increase texture and mid- palate weight. Finally prior to bottling the wine was gently racked and blended, capturing flavour freshness and richness.
