Colour The 2012 Sauvignon Blanc Semillon is lemon green in colour
Aroma lifted fruit aromas of citrus and melon all delicately interwoven with subtle herbaceous notes.
Palate The palate is fresh and lively, with ripe tropical fruit flavours, zesty lime and a soft creamy lemon curd finish. The portion of Semillon spent on lees rounds the palate, adding an extra dimension to the wine.
Cellar A wine best enjoyed young

The Fruit This perfect blend showcases all of the unique attributes and varietal characteristics which can be produced in this historic wine growing area. The Sauvignon Blanc, grown in the Eden Valley was specifically chosen for its vibrancy and classic fruit profile. The Semillon component was sourced from two of the oldest Semillon plantings available, 99 and 65 years old producing fruit with exceptional character and density of flavour.
Winemaking The fruit was crushed and free-run juice drained from skins, then cold settled in small batches for 48 hours. Fermentation was controlled at low temperatures in stainless steel tanks for about 2 months to maximise the retention of fresh varietal flavours. A small portion (7%) of the Semillon was matured in seasoned French oak and left on yeast lees to impart additional texture and richness along with giving perfect balance.
